Hello my people!
Today, I am going to share one of my favorite recipes – Fast and East Nutter Butter Banana Pudding.
But first, how was your week last week? My week was busy, busy. On Tuesday, the boys, Seth and I headed to La Crosse (an hour away from my house) at 6:45 am for the boys’ appointments. My amazing mother-in-law came to La Crosse to get Kirby after his appointment and took him to lunch and to school so he could at least be at school for half of the day. Then, Seth, Quinn, Brexton and I headed to Rochester (an hour away from La Crosse and 2 hours away from our house) for Quinn’s appointment with his GI doctor and blood work. We didn’t get home until 6:45 pm. It was a long day but Quinn and Brexton were troopers. Seth dropped us off, grabbed his clothes and headed to Milwaukee for a work-related class. He came back home on Thursday early in the evening. We missed him but the boys and I had fun having “slumber parties” in mom’s room for two nights (aka watch “Trolls” [affiliate link] in mom’s bed and fall asleep at a very late hour – lol). Then, on Friday, we headed back to Rochester for Quinn’s ultrasound to make sure his vein is still open and working properly (you can read the post about Quinn’s medical condition here). So, yeah, it’s been a very busy week. But, as always, I am so grateful we are close enough to such great doctors and that our boys have the best care possible.
Now let’s get to this recipe that I have to share with you. First though, I have a confession: I love peanut butter. I could eat it by the spoonful. One of the best food combinations, in my opinion, is peanut butter and bananas… and chocolate… or caramel. So, without further ado, here is one of my favorite recipes for Nutter Butter Banana Pudding. Technically, you are supposed to put Vanilla Wafers in it instead of Nutter Butters but I found that Nutter Butters work just as well, if not better than Vanilla Wafers. But it really just depends on your taste buds. Whether you decide to use Nutter Butters or Vanilla Wafers, this banana pudding is so yummy and not like your regular old banana pudding. It is fluffy and just delicious.
So here’s the recipe:
1 – 14 oz. can sweetened condensed milk
1 1/2 c. milk
1 5 oz. package instant vanilla pudding
2 cups cool whip
1 package Nutter Butters (or Vanilla Wafers)
3 bananas, sliced
Mix condensed milk with milk. Add pudding mix – beat well. Chill for 5 minutes. Fold in cool whip. Layer 3 times in bowl – pudding/bananas/Nutter Butters (or Vanilla Wafers). Top with crushed Nutter Butters (or Vanilla Wafers). Keep refrigerated.

Here are a couple of tips:
-You can use evaporated milk but it won’t be as sweet and it won’t be as fluffy.
-Personally, I think it is better the next day because it allows the Nutter Butters to soften.
-Don’t use cook and serve pudding 🙂
